What’s Your Favorite Recipe?

Kip’s Cran Jam 

Celebrating the holidays with Kip’s combo recipe jam that is perfect for toasted Bay's English Muffin while enjoy hot cup of Dunkin Donut's Coffee  on a chilly morning. The jam is great on a biscuit or dinner roll too. Makes a great addition to turkey or ham dinner.  Enjoy.

  • One (1) large package/bag of cranberries

  • One (1) cup of sugar

  • Three (3) quarts of water

  • Two (2) peeled and chopped sweet apples (Fuji, Gala, Kiku)

  • Two (2) peeled and chopped oranges

  • Two (2) cups of chopped strawberries

  • One (1) or two (2) cans of chopped and drained Dole pineapples

  • One (1) package of gelatin if desired (I do not use)

  • Chopped pecans for topping

  • Preferred Ball Mason Jars or small containers.

Bring water and sugar to a boil in seven (7) quart pan or Dutch oven (preferred). Adjust to medium/high heat and add cranberries (adjust heat so no rolling boil). Cook cranberries till cooked (or popped) about 30-45 minutes. Start adding all fruit items and let cook for another 45-60 minutes on medium heat, stirring occasionally. Mixture will begin to thicken. Emulsify all ingredients and let cook another 60-75 minutes (cooking time can be adjusted up or down as you like). Cooking time will not impact final product. If not thickening, starch can be added as desired.  While warm, spoon into containers, top with some chopped pecans and seal.  Chill and enjoy

NOTE:  Kip’s Cran Jam is combination of many attempts over the last 30 years. It is based on my Grand Mother’s strawberry jam recipe.
